Salads are great for summer lunches and dinners, offering a fresh and light meal. Caesar salads are a popular option. However, while store-bought dressing is convenient, it can often contain lots of preservatives and stabilisers.
This homemade Caesar salad dressing recipe from Good Food is fresh, zingy and super tasty. The recipe notes said: "Make a rich and creamy dressing to perk up lettuce, drizzle over cooked greens or enjoy as a tangy dip."
Ingredients:One garlic clove
Two anchovies
15g parmesan
Five tablespoons of mayonnaise
One tablespoon of white wine vinegar
Homemade salad dressings often taste much better than store-bought because they offer superior flavour and freshness.
They can also be healthier, as you have control of the salt levels and ingredients.
Method:Start by crushing the garlic to a paste using a pestle and mortar, then mash in the anchovies.
Spoon into a bowl and finely grate in the parmesan, then stir in the mayonnaise and vinegar.

The dressing should be the consistency of yoghurt. If it's thicker, stir in a few drops of water to loosen it.
This salad dressing is best used straight away but can be stored in the fridge to use later in the day.
If you're looking for an even fresher flavour, add a squeeze of lemon juice into the sauce.
