Finding the time to cook lunch or dinner during the week can be tricky, and it's often so much easier when things can go in one tray in the oven together. If you're not a huge fan of , or are just getting started with finding your way around the kitchen, traybakes are a beginner-friendly way to make healthy, homemade meals using a mix of cupboard and fresh ingredients.
Many of us probably , or spend on unnecessary ingredients when we already have stuff at home, even if it is lurking in the back of the cupboard. Making sure you always have some kitchen essentials lying around will likely save you spending any money on unnecessary food shops, or even eating out, and this for a chickpea, tomato and halloumi traybake is ideal for using up ingredients that you probably already have stored away.
If you're on a budget, tinned ingredients are also a great way to make healthy and filling meals for the whole family. Costing just 49p in Sainsbury's and Tesco, chickpeas are the "ultimate budget hero" and are high in fibre and protein, meaning they'll keep you full for longer.
Using halloumi, this recipe, shared by Katie Leonard, who runs the TikTok account @thehumblepescatarian, is also suitable for vegetarians, or makes for a tasty alternative to meat if you simply don't feel like eating it.
While it's often grilled, halloumi is also delicious when baked and great for absorbing flavour. Katie adds paprika, but you can also add your own preferred spices, including oregano or cayenne pepper for an extra kick.
Roasted in the oven, the chickpeas will "crisp up beautifully and soak in the spices and tomato juices", and the "fuss-free recipe" is ready in just 30 minutes.
How to make chickpea, tomato & halloumi traybakeIngredients
- 400g tin of chickpeas in water
- 200g cherry tomatoes
- 200g halloumi
- One red onion
- Two teaspoons of smoked paprika (or your choice of spice)
- Salt and pepper
Method
Preheat your oven to 200C and prepare your ingredients while it's heating up. Cut the halloumi into cubes and the onion into thick chunks. Add the onion, tomatoes and chickpeas in water to a roasting dish and give it a drizzle of olive oil.
Season with paprika, or your choice of spice and any additional spices you want to use, and sprinkle with some salt and pepper. Roast for 15 minutes, giving the chickpeas time to crisp and letting the tomatoes soften.
Stir it before scattering in the halloumi cubes and add some more paprika or your choice of seasonings. Oregano will also work well. Return the dish to the oven for another 15 minutes until the halloumi is golden and serve in bowls once done.
